Some observations:
To the OP:
Respectfully, WOW is as immersive as the developers make it. EVE is as immersive as YOU make it. I am making no judgements or aspersions as to your experiences to date playing EVE, I am simply making an accurate observation with the suggestion that EVE has countless aspects to explore... and that some are more immersive than others. Perhaps you have not yet found the corner of EVE that satisfies you and your wife. That being said there is absolutely nothing wrong with game hopping. As you said new aspects are being developed for EVE all the time which may suit you better than the current incarnation.
I'm afraid I cannot count the more adversarial aspects of EVE you listed as a fault. EVE was always intended to be a far grittier universe than any other game of its type. Again, not faulting your opinion, but all of the things you listed are easily countered... not by them being against the rules, but by you the player being aware of and learning how to counter them yourself. I have to admit I personally prefer it that way.
As for the rest:
People that insist there is no skill involved in EVE PVP are almost invariably mediocre combatants. They have never had the experience of turning the tables on a larger force through good strategy in fleet composition, superior tactics being employed to ensure your engagment is at your prefered range and at the location of your choosing, excellent use of scouts for vital intel and fleet placement, a proper exit strategy in place for each engagement, and utilizing teamwork to cover the other members of your fleet either logistically or through properly focused firepower. Or on a more individual level knowing how to pilot your ship to maximize firepower against a variety of foes in a variety of circumstance AND how to minimize damage to yourself from those same adversaries, when to overheat and when not to, how to trick an enemy that is faster and has longer range weapons into coming within your killzone, how to prioritise your targets appropriately, when to focus all of your weaponry on a single adversary and when to split your weapons systems up.
All of the above barely scratches the surface of course, but it should make one thing abundantly clear. You should never make the mistake of confusing a fast twitch reflex with skill... and the ability to hop does not make you a brilliant defensive strategist.
First person shooters are fine, and interesting maps for those games can make for some interesting tactics, but in comparison they are pretty simplistic. If your combat consists of simply hitting f1 through f8 you are doing it wrong.
